First of all I'm blown away by the overwhelming response to our newly launched Meatery On Sale collection.
We've already had to discontinue a few items as they were almost immediately sold out. So for that, a big THANK YOU from our family.
A number of folks have asked me to provide recommendations. Here are my 3 favorite items (currently) in this collection:
1 - Australian Wagyu Picanha Slices - $29 - I have to confess...when I got these at the price I did, I was REALLY worried about their quality. The first thing we did was break one open in the warehouse and cook it up. The 2nd thing I did? Buy a few for myself!
2 - Japanese A5 Wagyu Denver Steaks - $69 - These used to cost almost $100. Their Australian counterpart costs almost the exact same. I don't have any stories to tell here other than we received an incredible price on a fantastic steak and passed it on to you.
3 - Australian Wagyu Purebred Ribeye - $59/$79 - These are definitely the most popular, and supply is running low. These ribeyes are incredibly tender, beautifully-marbled and cost 40% less than their Fullblood Australian Wagyu counterpart.
Today's Education - what is the difference between Purebred and Fullblood?
Lots of Wagyu is crossbred with non-Wagyu cattle, most famously American Wagyu. This is known as F1, or "first cross."
There are a lot of reasons for crossbreeding Wagyu. Price, availability of fullblood heifers and optimizing genetics for climate are a few of the most popular.
Here are the 3 most common types of Wagyu:
F1 - 50% Wagyu
F4 - 93.75% Wagyu - this occurs the 4th generation of being crossed against a fullblood Wagyu cattle (0% -> 50-50% -> 75-25%, -> 87.5-12.5% -> 93.75-6.25%)
Fullblood - 100% Wagyu
