We can't know for sure which of the stories are true. However, we do know that Wagyu farmers take great care to ensure that the cows' muscles don't tense up. This generally means letting them roam free on perfectly manicured pastures and not making them move too much. Some go the extra mile and massage the cows with a special brush to increase blood circulation and release tension. Then there's the diet. Wagyu are never given steroids, hormones or drugs to help them gain weight faster. The process of fattening up is 100% natural, which means it takes a long time - 2-3 years as opposed to a few months. They get three meals a day made up of the best of ingredients, including hay, grain and wheat. They are generally weighed once a month and are expected to gain around 2.5 pounds per day. The cows mature until they gain around 50% fat... then the jig is pretty much up. What's with the Wagyu grading system? The meat is graded by the Japanese Meat Grading Association. A5 is the highest grade given through the VERY strict standards of this system. All our Japanese A5 Wagyu arrives with a Certificate of Authenticity that includes the nose print of the cow.
